For our new outlet and new BEACH BAR concept we are looking for an Executive Chef whi is going to coordinate two concept Mama Pizza and THE BEACH CLUB. In particular we need someone with baking skills, strong in egss and cold kitchen. We will have fun in developing the new team and menu, as well as refreshin our Mama Pizza classic italian menu and bringing our concept to the next level.
Key Responsibilities:
Menu Development and Planning:
Develop and update the menu to reflect seasonal ingredients, trends, and customer preferences.
Create new dishes and revise existing ones to maintain a fresh and exciting menu.
Kitchen Management:
Oversee all kitchen operations, ensuring efficient workflow, cleanliness, and safety.
Monitor kitchen equipment and maintenance, and coordinate repairs when necessary.
Control and manage food costs, portion sizes, and wastage to optimize profitability.
Culinary Excellence:
Ensure that all dishes meet the highest culinary standards in taste, presentation, and quality.
Train kitchen staff to follow standardized recipes and cooking techniques.
Staff Supervision and Development:
Recruit, hire, and train kitchen staff.
Set performance expectations, conduct performance reviews, and provide guidance to improve kitchen staff's skills.
Create work schedules and assign duties to kitchen personnel.
Food Safety and Hygiene:
Enforce and maintain strict food safety and hygiene standards to meet health and safety regulations.
Ensure the kitchen is compliant with local health department and food safety guidelines.
Inventory and Ordering:
Monitor and manage kitchen inventory, including ingredients, supplies, and equipment.
Place orders for ingredients, ensuring timely and cost-effective procurement.
Budget Management:
Collaborate with restaurant management to set and manage the kitchen budget.
Control expenses and maximize profitability while maintaining quality.
Creativity and Innovation:
Stay updated on culinary trends and innovations.
Experiment with new dishes and culinary techniques to keep the menu fresh and exciting.
Qualifications:
Proven experience as an Executive Chef or similar role in a high-end restaurant or hospitality setting.
Culinary degree or equivalent professional culinary training.
Strong leadership and team management skills.
Exceptional culinary and creative skills.
Excellent communication and organizational abilities.
Knowledge of food safety and sanitation regulations.
Strong problem-solving skills and the ability to work under pressure.
Flexibility and adaptability to changing culinary trends and customer preferences.
The role of an Executive Chef is crucial in creating a memorable dining experience for customers. They are responsible for the overall success of the kitchen and the restaurant, ensuring that food is of the highest quality and prepared to the highest standards.
