Overview

Villa Tokay is seeking a talented and passionate Head Chef to lead our culinary team for the opening of a new restaurant featuring an Indonesian-Mediterranean concept inspired by the Spice Route from East to West through Indonesia. 

The ideal candidate will be responsible for overseeing all aspects of our kitchen operations, focusing on breakfast, lunch, room service, and primarily dinner service. This role requires exceptional culinary skills, creativity, and strong leadership abilities to ensure an outstanding dining experience for our guests.

Key responsibilities

Menu development: Create and innovate seasonal menus for breakfast, lunch, room service, and dinner, showcasing the diverse flavours and ingredients along the Spice Route, blending Indonesian and Mediterranean cuisines.
New restaurant opening: Lead the culinary efforts for the new restaurant, developing recipes and training staff to deliver an exceptional dining experience from day one.
Kitchen management: Oversee daily kitchen operations, ensuring efficient workflow and adherence to food safety and sanitation standards.
Staff leadership: Recruit, train, and manage kitchen staff, fostering a positive work environment that encourages teamwork and professional development.
Quality control: Maintain high standards for food quality, presentation, and taste; regularly review dishes and recipes to ensure consistency and excellence.
Inventory management: Manage inventory, food costs, and purchasing; ensure that the kitchen operates within budget while minimising waste.
Collaboration: Work closely with front-of-house staff to ensure seamless service and address any guest feedback or concerns promptly.
Health and safety compliance: Ensure compliance with health and safety regulations, maintaining a clean and organised kitchen environment.
Event management: Coordinate special events, private dining experiences, and catering services as needed.
Qualifications:

Proven experience as a Head Chef or similar role in a high-volume kitchen.
Culinary degree or equivalent experience preferred.
Strong knowledge of food safety regulations and best practices.
Excellent leadership, communication, and interpersonal skills.
Ability to work in a fast-paced environment and handle multiple tasks simultaneously.
Creativity and passion for culinary arts with a strong understanding of various cuisines, particularly Indonesian and Mediterranean.
